“Leftovers” can be deceiving. There is the food that was cooked for dinner but just waited on the stove unloved and uneaten until it was put in cold storage. Then there is the food dished out to children who either snacked too much after school, didn’t like what was cooked, or put too much soy sauce on it. This lunch is in the latter category, the final option. This is last night’s home-made “Chinese” food with lots of salty soy sauce and by-now very soggy chicken strips. It was not enough but a coworker gave me half an ear of corn that she was too full to polish off. I also just realized that this is NOT the low-sodium tomato juice. My hands were so swollen after all this salt, I could barely continue crocheting this hot pink summer hat!
